Cove alum comes home, opens food truck

There’s a new food truck in town, cooking up delicious food served between bread or tortillas. The Something in Between food truck is owned and operated by Kyle Kinder, who grew up in Copperas Cove before heading to New York to work in the restaurant industry.

“I’ve been cooking a great many years,” Kinder said. “I grew up here in Cove, and I took culinary arts program through the high school at the college, moved to New York and worked there for close to a decade, came back and just kind of wanted to do my own thing. Not have to, I guess, have a boss or be told what to cook and how to cook. I can just kind of do whatever I want when I want it.” 

The name “Something In Between” refers to the menu items, which are mainly sandwiches and tacos. 

“Me and my wife also joke that it can really be open to whatever you want, because food is usually in between something at some point anyways,” Kinder said. 

The menu includes a Banh mi sandwich made with coconut chicken rillette, grilled lemongrass chicken, pickled carrot, cucumber, cilantro and mayo, for $8. There’s also a pulled pork sandwich made with beer braised pork shoulder, apple/jicama slaw and tangy mustard barbeque sauce, for $8. 

More homestyle items include the chili cheese dog featuring homemade chili, cheddar jack cheese and pickled red onions on a fried or grilled hot dog, for $5; and the sloppy joe grilled cheese on Texas toast with homemade sloppy joe, mozzarella cheese and pickled onion, also for $5. The breakfast menu includes “Chicken or the Egg”, a chicken and biscuit sandwich for $4; “Taco-Bout Breakfast”, a breakfast taco for $3; and “Oh My Gravy”, biscuits and gravy for $4, with the option to add scrambled eggs for $0.50 and add a fried chicken strip for $2. 

Kinder said that the biscuits are homemade, as is nearly everything else on the menu.  

Other miscellaneous items include various candies, chips, cookies, crackers, muffins, Slim Jims, soda, Red Bull and water. 

Kinder said the menu is still developing. The food truck has been open for less than two weeks, according to Kinder. He closed the truck Tuesday and Wednesday due to the weather and spent his time doing recipe testing for future menu items. 

“I ultimately want to serve what the community wants,” Kinder said. “I spent many years working at ultra-fine dining in New York, plating food with tweezers and got kind of tired of the, I guess, pretentiousness of the food, and honestly I enjoy cooking all food. I more enjoy cooking for people, so as people come up to the truck and have ideas of what they would like to see, that’s kind of what the truck is going to evolve into, you know- a food truck that the community can get food that they’re having a hard time finding, you know, if they’re from somewhere else in the U.S.. Being a military town, there’s a lot of food that you might miss from back home. That’s what I want to bring to everybody here.”

Kinder added that he wants to use his food truck to give back to the community. 

Something in Between is located at the Advance Auto Parts. Hours of operation are subject to change but the truck currently serves breakfast items from 7 a.m. to 11 a.m. and lunch/dinner options until 5 p.m.
