Popeye’s to open Monday

After about four months of site work and construction, Popeye’s Louisiana Kitchen will be opening its doors on Monday, July 23 at 10:30 a.m., according to the restaurant’s sign.

On Thursday morning, workers were making some of the final touches to the new structure, located at 1501 E. Bus. 190 next to CVS.

Also according to signs posted outside the store, Popeye’s is hiring via the website popeyeshires.com.

The Leader-Press contacted Popeye’s for information about the store’s opening and hiring. However, it has not been confirmed how many employees the store has hired, or will continue to hire after its doors open.

Although site work began on the property in March, Popeye’s has been working to bring the restaurant to Copperas Cove since 2014.

A prior site beside Discount Tire in Copperas Cove had been a possible location for the restaurant, with negotiations on the property purchase falling through. Then in 2017, Popeye’s went through with the purchase of the empty lot beside CVS for the site of its newest location. ACcording to the company website, Popeye’s has more than 2,700 restaurants across the U.S. and worldwide.
