Cove Soup Kitchen holds breakfast fundraiser

It was called a pancake breakfast fundraiser, but the menu at the Copperas Cove Soup Kitchen on Saturday morning had much more than pancakes.
Patrick Richardson, the soup kitchen’s director and cook, opened the facility’s doors on a weekend day to serve up a hot breakfast for donations and to get the word out about how the kitchen feeds people lunch and dinner Monday through Friday. Saturday’s event raised $310.
“This has turned out great; I’ve really enjoyed it,” Richardson said of the breakfast, although he wouldn’t reveal his secret ingredients added to the pancakes and waffles that were served along with scrambled eggs, sausage, grits and more. He did say he’s already planning another event like this in the future.
